Apple and Oat Spiced Muffins

These muffins are a hit with everyone in our family. They are on the healthier side, filling and great for lunch boxes. They are moist and many, if not all, of the ingredients are usually what we have in our cupboard and fridge ready to go.

I also have to admit that I am a terrible baker… But these work! So I thought I would be crazy not to share. I find it really frustrating searching for a recipe and having to scroll through A LOT of information when all I really want to know is if I have all the ingredients to make the recipe. So here it is…

Ingredients:

–          ¼ cup buckwheat flour

–          ¾ cup wholemeal flour

–          1 cup quick oats*

–          ½ tbsp baking powder

–          1 tsp bicarb

–          1tsp nutmeg

–          ½ tsp cinnamon

–          Pinch of salt

–          125g melted butter, cooled

–          ¾ cup milk

–          1/3 cup + 1 tbsp coconut sugar

–          2 eggs

–          2 medium sized apples, peeled and cubed

Method:

  1.    Preheat oven 180 degrees celsius
  2.    Prep 12 cup muffin tray
  3.    Place milk, butter, sugar and eggs into a bowl. Combine with electric whisks until    combined and a little frothy
  4.    Add all dry ingredients. Mix until just combined
  5.    Fold in apple
  6.    Distribute evenly into muffin tray.
  7.    Bake for 15-20 min until centre is just cooked. Use skewer to check.
  8.    Allow to cool for 10 minutes.
  9.    Tastes ridiculously good with butter and a hot cup of tea.

*I use normal oats and quickly blend a little bit to make ‘quick’ oats
