Customisable Healthy Pavlova

Is there anything more delicious than a pav? The only problem is that it’s is absolutely brimming with ultra-refined sugar.  So, I went searching for some solutions and here’s the result: a lighter, healthier, dairy-free (but still delicious) pav everyone will love.  The best part? You can use so many flavour combos to make it uniquely your own!

Ingredients:

  • 3 egg whites
  • ¼ cup organic raw sugar 
  • Pinch of cream of tartar
  • 1 tsp vanilla extract
  • ¼ tsp almond extract or brandy extract depending on your preference.

Topping

  • Refrigerated can of coconut cream (or whipping coconut cream)
  • 1 tsp vanilla extract 
  • Optional: 1 tbs of honey or maple syrup
  • Optional: 2 tbs of brandy or kahlua
  • Optional: ¼ tsp pumpkin pie spice
  • Optional: 1 tbsp of cacao powder
  • Berries or fruit of your choice.

Method

  1. Preheat your oven to 140 ̊C (120 ̊C in a fan oven) and get some baking paper and cut it into a 20cm circle. Then put the circle on a baking sheet.
  2. Put egg whites into a bowl and whisk till stiff peaks appear. Carefully tilt bowl – the eggs are ready if they do not slide.
  3. Gradually whisk in sugar, 1tbsp at a time, until the meringue is thick and glossy, then whisk in the cream of tartar and any flavoring.
  4. Spread the mixture over the circle on tray. Bake for 55 minutes or until meringue is crisp and pale. Turn oven off and leave the pavlova in the oven to cool.
  5. Whip your coconut cream JUST before serving (it won’t always hold it’s shape the way dairy does) and add in vanilla extract and any of the optional ingredients.  Some good combinations are:
              a.) Maple syrup and pumpkin pie spice
              b.) Honey and cacao
              c.) Brandy and honey
              d.) Kahlua and cacao (tastes like tiramisu!)
  6. Cover your pav with your whipped cream and your fruit of choice! Good combos are:
              a.) Vanilla cream with pineapple and kiwi and shaved coconut
              b.) Cacao cream with cherries
              c.) Maple & pumpkin spice cream with banana
              d.) Kahlua & cacao cream with red berries
              e.) Brandy & honey cream with dates, dried cherries and candied pecans

              f.) Vanilla cream with mango, passionfruit, and shaved coconut
