Healthy Anzac Slice

I love Anzac Biscuits but when you’re a mum of five kids time is always limited.  Making this into a slice is just quicker when compared to rolling into biscuits and makes a great lunchbox treat!

Ingredients

  • 120g organic butter
  • 2 tablespoons water
  • 2 tablespoons pure golden syrup or maple syrup
  • 1 teaspoon bi-carb soda
  • 160g flour
  • 90g date paste
  • 90g oats
  • 85g desiccated coconut

Method

  1. Grease and line a 20cm square baking tin
  2. Preheat oven to 160 degrees
  3. Add butter, water and syrup to a small saucepan and melt
  4. Once melted add bi-carb soda to the saucepan
  5. Place flour, oats and coconut to a medium sized bowl
  6. Make a well in the middle of the dry ingredients bowl and pour the melted butter into the well
  7. Stir in the melted butter until combined
  8. Add the date paste and mix together
  9. Spread over a square tin and bake for 20 minutes
  10. Leave in the tin to cool for 15 minutes then place on a cooling rack
