Raw Chocolate Slice

This is a regular treat in our house that the whole family enjoys.  Its foolproof and has been made in a number of different ways using a variety of different nuts, seeds and sweeteners. The following combination is definitely my favourite.

Ingredients: Base

  • 2 cups cashews
  • ½ cup cacao powder
  • 1 cup shredded coconut
  • 1 tsp vanilla paste
  • 8-10 dried dates
  • 2 tbsp maple syrup
  • 2-3 tbsp water
  • Pinch pink himalayan salt

Ingredients: Icing

  • 125mls coconut milk
  • 125g dark chocolate
  • 1/2 tsp vanilla paste

Method

  1. Blend cashews to a flour in a high speed blender.
  2. Add cacao powder, shredded coconut, vanilla paste, and dried dates.  Blitz to incorporate.
  3. Add water and maple syrup to taste until mixture forms fudge like consistency and has come together
  4. Press into 20cm lined square tin.  Refrigerate.
  5. Gently warm coconut milk and vanilla paste in a small saucepan over low heat. Do not boil.  Add finely chopped/grated chocolate and remove from heat to sit for a few minutes.
  6. Stir in chocolate and mix until it is fully incorporated into the coconut milk.
  7. Pour on top of base.
  8. Set in the Refrigerator and slice into small squares when set.
  9. Enjoy!
