Spiced Pumpkin Soup

Who doesn’t love a hearty homemade pumpkin soup for the whole family? I love making this one as it is super easy to make but full of flavour.  The spices are warm (not spicy) and the kids just love it.

 

Ingredients:

  • 1 Pumpkin
  • 3 Shallot stalks
  • 3 cloves of garlic
  • 6 rashers of middle bacon
  • 2 tbsp curry powder
  • 1L Vegetable stock
  • Herbamare (Herb salt) and Cracked Pepper
  • 1Tbsp Coconut oil

Method:

      1.  Cut pumpkin into chunks and remove the skin. Cut the shallot stalks and garlic into slices. Cut the bacon into pieces
      2.  Pour 1 tbsp coconut oil into large soup pan and on medium heat on stove fry off shallot stalks, garlic and bacon for 2 minutes.
      3.  Add in 2 tbsp curry powder and mix through.
      4.  Add in pumpkin and mix through and cook for 2 mins.
      5. Pour in 1L vegetable stock into soup pan, mix all ingredients and turn the heat up to high. Place lid over soup pan.
      6.  Add Herbamare and cracked pepper to taste and stir through.
      7. Once the pumpkin is soft take soup pan off heat and pour the soup into food processor and blend until liquid.
      8. Pour into soup bowls and enjoy!!                                                                                                            Note: You can also add a dash of sour cream on top and eat with some homemade cheesy toast.  Yum!!
