Lunchbox Friendly Energy Bites

These nut free energy bars are perfect for the kids’ lunch boxes, but I love them for an afternoon treat for myself!

Ingredients

– 2 cups rolled oats
– 1 cup dessicated coconut
– 1  tbs chia seeds
– 2 tbs Cacao
– 1/4 cup pure maple syrup
– 3 tbs melted coconut oil

Method

1. Place all dry ingredients into a Thermomix or  food processor and process until the oats are broken down.

2. Add the maple syrup and melted coconut oil.  Process until combined. If the mixture doesn’t stick together when pressed then add a little bit more maple syrup.

3. Press into moulds (silicone moulds an ice cube tray).

They will last for several weeks in the fridge.
