Apple Pie Breakfast Bar

This tastes like dessert for breakfast, but is actually a super healthy recipe you can make ahead of time and have sliced and ready to grab in the morning.

Ingredients

1 cup quick oats

1 cup old fashioned oats

¼ cup ground flax seed

½ teaspoon salt  

1 teaspoon apple pie spice mix 

½ cup unsweetened apple sauce

2 free range eggs, beaten

1/3 cup coconut sugar OR ¼ cup maple syrup

¼ cup coconut oil (melted

1 cup diced apple pieces

½ cup toasted walnuts (you can use pumpkin seeds to make nut free) chopped

½ cup raisins (optional)

Method

  1. Preheat oven to 170 degrees (340 F) and line a square tin with foil and spray with coconut oil.
  2. Mix together the quick oats, old fashioned oats, ground flax, salt and spices.
  3. Whisk together the eggs, applesauce, coconut sugar and melted coconut oil then add to the dry ingredients and stir to combine.   
  4. Fold in the diced apple, walnuts and raisins.
  5. Place the mixture into your lined and oiled square tin, spreading out evenly to the edges.  
  6. Bake for 20-30 minutes until set.  Let it cool in the tin then slice and transfer to an airtight container.   

Ways to make this recipe even easier

  • You can just use quick oats or old fashioned oats if that’s all you have in the cupboard
  • I only had a baby food sachet of pureed apples in the cupboard and they worked out great, no additives and was the perfect measurement
  • I never roast or chop pumpkin seeds, just pop them in
